In his Restaurant Cesare proposes sample menus. They are extremely varied depending on seasonal and local products. Cesare gets up very early in the morning and goes shopping in the surrounding open-air markets in Dogliani, Ceva, Mondovì, Alba. Every day he also visits or receives friends who grow vegetables and fruit for him, who breed goats and guinea-fowl, who pick up wild mushrooms in the woods of Somano and the Belbo Valley, or find white truffles in autumn.
Everybody knows that Cesare looks for and buys the best, from potaotes to truffles, form cockerels to honey, from onions to meat: “Divine Cesare” manipulates all the ingredients with deliberate, experienced skill; his hands move artlessly and flawlessly, like a miracle, while he cuts, kneads, stirs food on the stove and arranges food on plates. Cesare is always open to trying new dishes; he imagines and thinks about them during the low season, in summer; and when he is confident he has found something special, he puts it to the test. He asks his friends for an opinion or an evaluation while having a relaxing chat about cooking or painting, about memories of the Langhe on a Sunday afternoon.
